Mascot Mania! « Korean Kibble.

“Mascot Mania!” is a series which features some of the “mascots” I’ve seen in Korea. Unlike in the United States, mascots in Korea are not limited to schools and sports teams. You’ll find mascots/characters for just about everything in Korea, from products, organizations and even cities! Clearly, ”cuteness” is a cultural value that reigns supreme in this country~~

Oh My! Attack of the Octopi! – Knitted Octopus Pattern « knitting nandu.

If you’re a grammar ace, don’t worry—I know that “octopuses” is considered more appropriate to pluralize “octopus,” but really–it doesn’t sound nearly as cute…

And speaking of cute–these are among my favorite toys to make. Who can resist their round little heads, their shiny black eyes, and their multitude of legs? They rest perfectly on a desk, bookshelf or windowsill–and with a little bell inside, they can be a welcome addition to any baby crib or toy box.

Thai Fish Curry « Jenny Lee’s Jottings

I miss so many things about LA–and given that I’m in the middle of yet another sticky and humid Korean summer, the weather is #1 on my list. However, multi-cultural cuisine is definitely a very close second! I miss being able to head out and eat  Ethiopian injera,  Indian samosas, or Middle Eastern falafel on a whim, and an inexpensive whim at that. Compared to this ethnic food oasis, my current home of Icheon, Korea is akin to an ethnic food desert!

Jenny Lee's Jottings

Few things annoy me as much as a dry cake.  You know what I’m talking about–cakes that fail the “fork test.” Can you pick up those leftover crumbs on your plate with just the s-l-i-g-h-t-e-s-t pressure from the backside of your fork? Does the cake gently spring back if you give it a little nudge with your finger? No? Then you might as well be eating a cracker…

Unfortunately, I find that most cakes in Korea fail the fork test on a regular basis— It’s not too surprising, since baked goods are still relatively new to a country that excels in rice cakes, shaved ice desserts and red bean buns… Basically, I almost never buy cakes in Korea–and instead choose to make it from scratch at home. However, there are a few challenges to overcome, such as the lack of certain ingredients which are ideal for moist-cake baking.

Dear readers!

I cannot believe a month has whizzed by since I last blogged. This past month has been quite hectic since I’ve started a new job while also having to meet three major deadlines for some freelance curriculum development work. Another key development that has really kept my hands full is my newly rescued foster dog!

Taking care of Hoochoo and my resident dog, Webby, has been TONS of work–but it has also been very rewarding. I’ve started a new blog, I Heart Webby, to better catalog my doggy adventures. If you’re a fan of furry four-legged friends, then I hope you enjoy this new blog!
